Zucchini Spaghetti

Zucchini Spaghetti

 

Serves 2

Ingredients

  • 2 large zucchinis, spiralled
  • 4 tomatoes, diced
  • 170g tin pure tomato paste
  • 1 sprig basil, finely chopped
  • 150g mushrooms diced
  • 5 cloves garlic, finely diced
  • 1 large onion, diced
  • 2 heaped tbsp ground cumin seeds
  • 1 glug of olive oil
  • pepper and salt to taste

Method

  1. Spiral cut the two zucchinis with a vegetable slicer/spiral maker and divide into 2 large bowls.
  2. Dice the onion and garlic and shallow fry for 2 minutes in the oil. Add the tomatoes, mushrooms and tomato paste and stir gently for 3 minutes. Stir in the cumin with salt and pepper and simmer for another 5 minutes.

Serve over the zucchini spirals with sprinkled basil.

Note: If you don’t have a spiral maker you can dice and cook the zucchinis with the tomatoes.
