Rosemary Chicken Breasts

Serves 4

Ingredients

  • 4 skinless chicken breasts
  • 2 lemons (juice and zest of both)
  • 3 cloves of garlic OR 2 tsp minced garlic
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary
  • 1 tsp sea salt
  • 1/2 tsp cracked black pepper

Method

  1. Place chicken breasts in a large bowl and cover with cling wrap.
  2. Using a microplane, zest lemons over a small bowl.
  3. Combine juice from lemons and all remaining ingredients in a bowl and whisk to combine.
  4. Pour marinade over chicken, cover, and refrigerate for 30 minutes or overnight.
  5. Put olive oil in sauce pan and pre-heat on high.
  6. Cook chicken for 5 minutes each side until they are light brown.
  7. Serve chicken breasts whole or sliced with steamed vegetables or a side salad.
