Energy Bars
Not only are these bars sweet enough to fulfil any sugar craving, they are also great as a pre- or post-workout snack.
Serves: Makes approx. 8 bars
Ingredients
- 2 cups medjool dates, pitted
- 1 cup raw cashews
- 1 cup raw almonds
- 2 tsp ground cinnamon
- 2 tsp vanilla essence
Method
- Blend medjool dates in food processor until it forms a thick paste.
- Remove paste and place in a separate mixing bowl. Now process almonds and cashews until they are reduced to crumbs, but not powder.
- Add nuts, cinnamon and vanilla essence to paste and mix until well combined.
- Place mixture in a dish lined with baking paper to form bars that are at a thickness to your liking.
- Use a spatula or the back of a spoon to smooth bars out evenly to edges. Cover and refrigerate until firm.
- Cut into bars when ready to eat and store in fridge.
