Energy Bars

 

Not only are these bars sweet enough to fulfil any sugar craving, they are also great as a pre- or post-workout snack.

Serves: Makes approx. 8 bars

Ingredients

  • 2 cups medjool dates, pitted
  • 1 cup raw cashews
  • 1 cup raw almonds
  • 2 tsp ground cinnamon
  • 2 tsp vanilla essence

Method

  1. Blend medjool dates in food processor until it forms a thick paste.
  2. Remove paste and place in a separate mixing bowl. Now process almonds and cashews until they are reduced to crumbs, but not powder.
  3. Add nuts, cinnamon and vanilla essence to paste and mix until well combined.
  4. Place mixture in a dish lined with baking paper to form bars that are at a thickness to your liking.
  5. Use a spatula or the back of a spoon to smooth bars out evenly to edges. Cover and refrigerate until firm.
  6. Cut into bars when ready to eat and store in fridge.
