Chocolate Mint Bites

 

For those who love chocolate and mint, these balls provide the perfect combination of both and are insanely delicious and easy to make. They are also free of grains, refined sugar and dairy to satisfy those sweet cravings without feeling guilty afterwards.

Serves: Approx. 24 balls

Ingredients

  • 1 cup walnuts
  • 1 cup Medjool dates, pitted
  • 1/3 cup cacao powder
  • 2/3 cup dessicated coconut + extra for coating
  • 2 tbsp almond milk or coconut milk, unsweetened
  • 1-1.5 tsp peppermint essence

Method

  1. Put walnuts in food processor and pulse until well chopped.
  2. Add dates and pulse together until well mixed.
  3. Add cacao powder, 2/3 cup dessicated coconut, peppermint essence, and 1 tbsp. almond or coconut milk.
  4. Pulse together until well combined. Add 1 more tbsp. of milk if needed and a little more peppermint essence if you want it extra minty.
  5. Form into balls, roll in coconut and store in an airtight container in the fridge.
