Grilled Atlantic Salmon With Tomato And Avocado Salsa

 

This method shows how easy it is to grill salmon. With tomato and avocado salsa on the side, it makes for one refreshing recipe!

Serves 4

Ingredients

  • 4 Atlantic salmon fillets
  • 1/4 tsp sea salt
  • Cracked black pepper
  • 2 tbsp olive oil

For the tomato and avocado salsa (makes 2 1/4 cups)

  • 1/4 cup red onion, chopped
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Sea salt and fresh cracked pepper to taste
  • 2 medium ripe tomatoes
  • 2 small garlic cloves, minced
  • 2 tbsp fresh basil leaves, chopped
  • 1/2 cup avocado, diced

Method

  1. Combine onion, olive oil, balsamic vinegar, 1/4 tsp salt and pepper. Put aside for 5 minutes.
  2. Dice tomatoes and place in a large bowl. Add garlic, basil, onion-balsamic combo and remaining 1/8 tsp salt and pepper to taste. Put aside to sit for a minimum of 10 minutes.
  3. Add additional 2 tbsp of olive oil to saucepan and pre-heat on medium-high.
  4. Season salmon with salt and fresh ground black pepper to taste.
  5. Place salmon skin-down on the stove top. Put lid on and allow to cook without turning for 8 to 10 minutes (depending on thickness), or until salmon is cooked through.
  6. Remove salmon from pan and cover with foil; rest for 2 to 3 minutes while you add the avocado to the tomato salsa.
  7. Serve each salmon fillet with 1/2 cup of tomato and avocado.
