Coconut And Mango Chia Pudding

 

This recipe is a perfect healthy dessert option, as it is full of antioxidants, good fats and probiotics. It tastes like dessert minus the overload of calories, and is also super simple to make.

Serves 4

Ingredients

  • 3 tbsp chia seeds
  • 1 cup coconut milk
  • 2 cups of full-fat Greek yoghurt
  • 2 mangoes, peeled and diced
  • Shredded coconut, for topping (optional)

Method

  1. Stir the chia seeds into coconut milk and refrigerate overnight.
  2. Add yoghurt to chia seed mixture.
  3. In either glasses or jars, layer one third of the diced mangoes, followed by one third of the yoghurt mix.
  4. Repeat step 3 twice.
