This easy nutritious meal combines avocado and hard-boiled eggs for a healthy dose of protein, healthy fats and fibre while also being low in carbs.

Serves 1

Ingredients

  • 2 free-range or organic boiled eggs, chopped
  • ½ avocado, diced
  • 1 heaped tbsp red onion, chopped finely
  • 1 heaped tbsp red capsicum, chopped finely
  • Sea salt and cracked black pepper to taste

Method

  1. Combine eggs, avocado, onion and capsicum in a bowl.
  2. Sprinkle some sea salt and pepper on top.
  3. Serve and enjoy!
